Yzym-LYS FOOD is a series of powder-type Lysozyme (also called as Muramidase or N-acetylmuramide glycanohydrlase), derived either from bacterial fermentation or from egg-white extraction. Lysozyme is 129 amino acid residues enzyme (EC 3.2.1.17), which occurs naturally in plant and animal tissues and in secretions such as tears, saliva and mucus. Egg-white sourced lysozyme contains total protein 3.4% - 3.5%, it is a stable protein and a typical representative of the lysozyme class. It functions by catalyzing the hydrolysis of 1,4-β-linkages between N-acetylmuramic acid and N-acetyl-D-glucosamine residues in peptidoglycans and between N-acetyl-D-glucosamine residues in chitodextrins.

UNIT DEFINITION:
1 unit is that amount of enzyme needed to catalyze a decrease in absorbance at 450nm of 0.001/min at 25 degrees at pH 6.24 in a 1cm cuvette due to lysis using a ~0.25mg/mL suspension of Micrococcus luteus.

PROCESSING CONDITION:
--Optimum pH: 4-6.5;
--Optimum temperature: 35 ° C;
The optimum amount of the enzyme must be in accordance with the specific production.

APPLICATION FIELD & EFFICACY:
--Used as food preservative in milk, aquatic products, meat, cake, wine and beverage by restraining the corruption of microorganisms in these products.

PACKAGING & DELIVERY:
25 kg/fiber drum or aluminum bags.
Special packaging is also available on request.

SHELF LIFE:
The enzyme activity could keep over 85% for 12 months if stored under the under favorable storage condition.
Notice: Tighten the lid after each usage to avoid pollution or damp.

STORAGE:
--Keep away from sunlight and rainwater during transportation and storage;
--Keep in a dry and well-ventilated environment below 25℃.

SAFETY:
Enzyme preparations belong to protein, which may induce sensitization and cause allergic type reactions in sensitized individuals. Prolonged contact may cause minor irritation for skin, eyes or mucous membrane of nose, so any direct contiguity with human body should be avoided. If irritation or allergic response for skin or eyes develops, consult a doctor.
